Target for groceries? While some of you may not have heard of “Super-Target” or have one near you, Super Target does in fact carry fully-stocked frozen foods section, tons of other groceries, drinks, candy, etc. to a much greater degree than at the normal Target locations. Market Pantry is Target’s “brand” so you’ll see plenty of red and white boxes and bags decorating the aisles. I picked up a few items on a whim and boy oh boy am I happy…

mMmmM cheese! Right after my last post where I mention I don’t want to use too much cheese and cream, look what I post! Haha! One of the best things I like about Chicken Parmesan is that there are so many variable factors. You can alter the types of cheese you use, how much cheese you use, the type of tomato sauce, how much tomato sauce, breaded or unbreaded chicken…etc! Here’s the one I like to make.

Yes, another new category! π This is a typical Vietnamese dish that will now be added to “Mommy Made”. It does contain a few strange ingredients but it’s worth buying since they are inexpensive and you can use them for other recipes (don’t worry, more will be added here ;). Are you noticing a trend here? I love seafood! After all those salmon recipes, I thought it’d be a nice change to try clams instead and this delicious and flavorful soup definitely hit the spot. What else is great about it? It requires very little ingredients and time. If you plan on eating other courses, this will make a great appetizer.

This is the final piece of that salmon I bought from Costco! I didn’t know what to put on it so I took a peek into my refrigerator for inspiration. I highly suggest that you do the same when you’re lacking ideas! π I’m sure you can infer from the title, but the only things that stood out were a container of fresh-tomato salsa and canned corn. Well this isn’t going to be the “recipe-of-the-century” salmon, but it wasn’t too shabby either.

Hold your biases to the side! Some of you will see the word “mayonnaise” and cringe while thinking of fearful images of fat. But I really haven’t met too many people that could turn down a perfectly made Baked Salmon Sushi Roll, and I think the same will hold true for the dish I made here! The best thing about cooking at home rather than ordering out of the house is portion-control and ingredient-control. Here I’ve taken a large piece of salmon, but controlled the amount of mayo I put on; giving it a great taste that’s probably healthier for you than a restaurant-bought substitute.

On my last visit to Costco Wholesale I picked up a salmon fillet weighing in at close to 3 pounds. – Notice the trend? First bananas and then salmon π I separated this into 3 ziplocked pieces and decided to not only eat a lot of salmon in the upcoming days but to post each time I ate it! A lot of us have heard advice on eating more fish to stay more healthy. That’s because they’re rich in Omega-3 fatty acids and other nutrients!
