This is the final piece of that salmon I bought from Costco! I didn’t know what to put on it so I took a peek into my refrigerator for inspiration. I highly suggest that you do the same when you’re lacking ideas!
I’m sure you can infer from the title, but the only things that stood out were a container of fresh-tomato salsa and canned corn. Well this isn’t going to be the “recipe-of-the-century” salmon, but it wasn’t too shabby either.

Time: 15 minutes
Price: under $10
- 1 pound salmon
- 1/2 cup salsa (any kind)
- 1/2 cup corn
- salt and pepper
Unlike the other two salmon recipes, this one didn’t seem like it would be salty enough for my taste. Therefore, make sure to sprinkle a few pinches of salt and pepper onto the salmon first. The picture shows the salad I ate alongside the salmon for dinner. I added more of my leftover corn and some mandarin oranges onto a bed of romaine lettuce. I topped the salad with a light-poppyseed dressing.
- Preheat the oven to 400 degrees.
- Add salt and pepper.
- Layer the salsa evenly over the salmon.
- Layer the corn evenly over the salsa.
- Cook for 12 minutes. The most common problem with baked salmon is hard/overcooked salmon. Even if it seems slightly undercooked in the very middle, it will continue to cook slightly with the retained heat.
Voila! So concludes this special on salmon! Although, I feel like making another Costco run soon again…
