This is the final piece of that salmon I bought from Costco! I didn’t know what to put on it so I took a peek into my refrigerator for inspiration. I highly suggest that you do the same when you’re lacking ideas! ;) I’m sure you can infer from the title, but the only things that stood out were a container of fresh-tomato salsa and canned corn. Well this isn’t going to be the “recipe-of-the-century” salmon, but it wasn’t too shabby either.

Time: 15 minutes
Price: under $10

  • 1 pound salmon
  • 1/2 cup salsa (any kind)
  • 1/2 cup corn
  • salt and pepper

Unlike the other two salmon recipes, this one didn’t seem like it would be salty enough for my taste. Therefore, make sure to sprinkle a few pinches of salt and pepper onto the salmon first. The picture shows the salad I ate alongside the salmon for dinner. I added more of my leftover corn and some mandarin oranges onto a bed of romaine lettuce. I topped the salad with a light-poppyseed dressing.

  1. Preheat the oven to 400 degrees.
  2. Add salt and pepper.
  3. Layer the salsa evenly over the salmon.
  4. Layer the corn evenly over the salsa.
  5. Cook for 12 minutes. The most common problem with baked salmon is hard/overcooked salmon. Even if it seems slightly undercooked in the very middle, it will continue to cook slightly with the retained heat.

Voila! So concludes this special on salmon! Although, I feel like making another Costco run soon again…
